Another salad recipe - use up those crates of Christmas Clementines...

Moroccan Orange and Olive salad

For one person:
Combine:
A serving of your choice of lettuce/greens
½ cup of good quality, pitted black olives (best bought in bulk and fresh, not in a can)
Small thinly sliced red onion
2 Clementine (or other) oranges, in segments

Dressing:
4 tablespoons olive oil
Juice of one lemon
about 2 tsp ground coriander seeds
dash of rose water
salt and pepper to taste

Combine and enjoy!
